Happy New Year! And what to do with turkey leftovers

The wish is a little late but sincere nonetheless!

As my first post for the new year, I wanted to post a recipe for turkey leftovers. It is simple, delicious and fast. I guess you could call it turkey in puff pastry and it's by no means my creation. Let's face it, I'm not that much of a genius in the kitchen. I have to have a recipe to follow and here's the one I followed:

1 Puff Pastry sheet
Leftover turkey (or any other meat in bite size pieces)
2 Hard boiled eggs - chopped (egg is optional)
Graded cheese (I used Colby Jack but use what you like, any amount will do)
1 raw egg
1/3 C milk

Unfold your slightly thawed out puff pastry sheet (it's already folded into 3rds). Mix together the meat, graded cheese and the hard boiled eggs in a bowl. In a measuring cup, mix milk and the egg whipping slightly. Add spices if desired and then add mixture to the meat/egg bowl. Mix until incorporated.



Lay the meat on the middle part of the puff pastry sheet and cut the sides into strips horizontally like in the picture above. Fold over the meat and bake at 400F for about 15-20 minutes. Ta dah, dinner is ready!
