Here's a great healthy dessert you can make easily at home from the Green Smoothie Girl's recipes:
1/2 cup Thai coconut meat
1/2 cup coconut liquid
1 Tbsp lemon juice
2 Tbsp any natural sweetener (she used Raw Agave nectar)
1/3 cup Cashews
6 frozen Strawberries
Process all ingredients in the blender until the consistency of cream. Layer cream sauce with 1/2 cup of blueberries ending with the cream sauce on top.
BTW, that 1/2 cup of blueberries is one serving so for my family of four for example I would need 2 cups of blueberries. Or raspberries would also be good. Here's how it should look:
