Super simple recipe




It looks like I've gravitated more towards recipes but what can I say? I have a couple of picky eaters so I'm always looking for something fast, simple and healthy, or at least fairly healthy.

I can't remember where I got this recipe from but my picky eaters love it. You will need:

6 Chicken breasts or I buy about 1.5lbs organic skinless boneless chick thighs
3 slices of bacon (I've not usually used bacon so you can leave it out and it'll still taste yummy)
10 oz can condensed Cream of Chicken soup OR Four Cheese Alfredo sauce. I haven't tried the cream of Chicken, I use Classico 4 cheese sauce.
4 oz jar of sliced mushrooms
1/2 c Swiss or Havarti cheese grated. I've used Colby Jack because we don't like Swiss and I don't know what Havarti tastes like.

Do this:
Cook bacon in a skillet until crisp. Drain on paper towels and then refrigerate. Cook chicken in bacon drippings for 3-5 minutes or until light brown. Place in a slow cooker and top with soup or cheese sauce and mushrooms. Cook about 6 hours on low. Top chicken with cheese and bacon and cook 10-15 minutes more. Serve with rice.

Note: Since I am lazy, I usually skip the bacon step and just dump my chicken in the crock without browning first. I top it with the sauce & mushrooms and let cook for 6 hrs. Yesterday I used a sprinkle of real bacon bits but I let them cook with the meat all day. It was delicious! Above as you guessed is a picture of my concoction.

  1. Harvati is delicious...it has an extremely mild flavor and is super creamy. Its only problem is that it is probably more expensive than colby jack.

    This sounds so YUMMY! we'll have to try it out!
