Outrageous chocolate brownie


This recipe is from Jorge Cruise's book The Belly Fat Cure.

Brownie:
3/4 cup unsalted butter, softened
1 1/2 cups Joseph's Maltitol sweetener syrup
1 1/2 tsp vanilla extract
3 eggs
3/4 cup flour
1/2 tsp baking powder
1/2 tsp salt

Optional glaze:
1/2 cup heavy cream
2 oz unsweetened baking chocolate
1/4 cup Maltitol sweetener syrup
2-5 packets Truvia, to taste

1. Brownie: Preheat oven to 350F. Butter an 8" square pan. (personal note: I used a 2qt rectangular Anchor Hooking dish and it was perfect.) Blend butter with Maltitol and vanilla in a bowl. Add eggs and mix well. Combine the dry ingredients and add to egg mixture. Stir until well blended. Pour batter into pan and bake for 40-45 minutes. Cool completely if you are going to put the glaze on.

2. Glaze: heat cream and chocolate over low heat stirring frequently until melted. (Personal note: I used Hershey's unsweetened cocoa and it is way too bitter! Do not like my glaze!!) Remove from heat and whisk in Maltitol sweetener until smooth. Add Truvia one packet at a time tasting each time to get desired sweetness. Pour over brownies and let set before cutting.
